Ingredients

  • 1 pound 93% lean ground beef
  • 2 (1 oz.) packets taco seasoning
  • 2 cups beef broth
  • 1 (15 oz.) can black beans drained and rinsed
  • 1 (15 oz.) can corn kernels drained
  • 1 cup salsa
  • 4 oz. cream cheese cut into small cubes
  • 1 cup shredded cheddar cheese
  • Optional Toppings: shredded cheese, sour cream, tortilla chips, chopped avocado, etc.

Instructions

  • Add the beef to a large soup pot over medium-high heat. Break the meat apart with a spoon. Cook for 6 minutes, until browned.
  • Add the taco seasoning to the beef. Stir until the meat is well coated in the seasoning.
  • Add the beef broth, beans, corn, and salsa. Stir well. Bring the liquid to a simmer.
  • Add the cream cheese. Stir until melted.
  • Add the shredded cheddar. Stir until melted.
  • Serve as is, or topped with chips, sour cream, avocado, etc.
