- 1 pound 93% lean ground beef
- 2 (1 oz.) packets taco seasoning
- 2 cups beef broth
- 1 (15 oz.) can black beans drained and rinsed
- 1 (15 oz.) can corn kernels drained
- 1 cup salsa
- 4 oz. cream cheese cut into small cubes
- 1 cup shredded cheddar cheese
- Optional Toppings: shredded cheese, sour cream, tortilla chips, chopped avocado, etc.
Add the beef to a large soup pot over medium-high heat. Break the meat apart with a spoon. Cook for 6 minutes, until browned.
Add the taco seasoning to the beef. Stir until the meat is well coated in the seasoning.
Add the beef broth, beans, corn, and salsa. Stir well. Bring the liquid to a simmer.
Add the cream cheese. Stir until melted.
Add the shredded cheddar. Stir until melted.
Serve as is, or topped with chips, sour cream, avocado, etc.
