Easy Cheesy Taco Soup is a family favorite recipe. It only takes 20 minutes to make and only uses a few common ingredients.
I make this soup all the time because it’s so quick and easy. Plus, the whole family loves it.
We top ours with Fritos (no affiliation), sour cream, shredded cheddar, and chopped avocado.
How To Make Taco Soup

- Add ground beef to a soup pot.
- Break the meat apart.
- Cook until browned.
- Add taco seasoning to the beef.
- Stir to coat the beef in seasonings.
- Add beef broth.
- Stir it together.
- Add black beans, corn kernels, and salsa.
- Stir it together.
- Bring the liquid to a simmer.
- Add cubed cream cheese.
- Stir until the cheese is melted.
- Add shredded cheddar cheese to the soup.
- Stir until the cheese is melted.
How To Store
Store the cheesy taco soup in a sealed container in the refrigerator for up to five days. Or, store it in the freezer for up to three months. Transfer the container to the refrigerator to thaw the day before you want to reheat it.

Easy Cheesy Taco Soup Recipe
Ingredients
- 1 pound 93% lean ground beef
- 2 (1 oz.) packets taco seasoning
- 2 cups beef broth
- 1 (15 oz.) can black beans drained and rinsed
- 1 (15 oz.) can corn kernels drained
- 1 cup salsa
- 4 oz. cream cheese cut into small cubes
- 1 cup shredded cheddar cheese
- Optional Toppings: shredded cheese, sour cream, tortilla chips, chopped avocado, etc.
Instructions
- Add the beef to a large soup pot over medium-high heat. Break the meat apart with a spoon. Cook for 6 minutes, until browned.
- Add the taco seasoning to the beef. Stir until the meat is well coated in the seasoning.
- Add the beef broth, beans, corn, and salsa. Stir well. Bring the liquid to a simmer.
- Add the cream cheese. Stir until melted.
- Add the shredded cheddar. Stir until melted.
- Serve as is, or topped with chips, sour cream, avocado, etc.
