Layered Crescent Roll Breakfast Casserole
This is one of my favorite weekend breakfast recipes. The buttery crescent roll base takes the flavor of this egg bake over the top.
It’s a great brunch recipe to take to a potluck because it’s great for feeding a crowd.
How To Make This Sausage & Crescent Roll Casserole

- Cook some bulk breakfast sausage.
- Drain off any excess fat.
- Add eggs, milk, salt, and pepper to a bowl.
- Whisk together.
- Press a package of crescent roll dough into the bottom of a baking dish.
- Pinch the crescent roll seams together.
Pillsbury also has crescent dough sheets (NO affiliation), which is basically crescent roll dough that hasn’t been perforated. That makes this dish even easier!
- Spread the cooked sausage over the crescent dough.
- Pour the egg mixture over the sausage.
- Sprinkle the top with cheese.
- Bake.
- Cool slightly before slicing.
Can I Make This Ahead Of Time
Yes! Just assemble the casserole according to the directions. Cover the dish with plastic wrap and place in the refrigerator overnight.
In the morning, remove the plastic wrap and let the dish come to room temperature as the oven is preheating.
It may take an additional 5-10 minutes to cook through.

Sausage Crescent Roll Breakfast Casserole Recipe
Ingredients
- 1 lb. bulk breakfast sausage
- 1 8 oz. tube refrigerated crescent rolls
- 8 large eggs
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 cups shredded mild cheddar cheese
Instructions
- Preheat oven to 375 degrees F. Spray a 13x9 inch baking dish with cooking spray.
- Add the sausage to a large skillet and place it over medium-high heat. Break the sausage apart with a wooden spoon. Cook until well browned. Drain off any excess fat.
- Unroll the crescent roll dough and place it in the bottom of the dish. Pinch the seams of the dough together and press out the dough to cover the bottom of the dish.
- Spread the cooked sausage over the dough.
- In a large bowl, add the eggs, milk, salt, and pepper. Whisk until well combined. Pour the eggs over the sausage. It is ok if some of the eggs get under the dough.
- Sprinkle the top with cheese.
- Bake uncovered for 40 minutes. Let rest 5 minutes before slicing.

I found this recipe last year and made it as a Christmas Brunch casserole. I never gave it a review, so I am here to let Amanda know how wonderful this recipe is/was AND it has been requested again for THIS Christmas Brunch. This has become my go to recipe for brunches and holidays. I make it the night before and I buy the precooked sausage crumbles. It is less than 5 minutes prep and is so delicious the next morning!!

I added green chili and garlic into the egg mixture (from new Mexico and we grow and roast our own but any green Chile from Hatch New Mexico will do. Don’t forget the garlic to help your belly digest it!) And it’s fantastic 1! Yummy yummy yummy
